Baked potato gratinated with ham and cream recipe 🍁 🦃

- This is one of my favorite recipes that my mom always make for chritmas eve and all our family loves and enjoy! We called it "Papa al horno gratinada con jamón y crema" in spanish (Mexico)

- Ingredients:
- 1 kg of potatoes cooked with skin
- 1 liter of cream
- 300 grams of Turkey ham in cubes
- 100 grams of butter in cubes
- 1⁄2 cup chopped parsley
- 2 cups of grated Manchego cheese
- Directions:
- STEP 1:
Preheat the oven to 350°F. Grease an 11 x 7 inch baking mold.
- STEP 2:
Place the potatoes in a large saucepan. Cover with water; bring to a boil. Cook over medium-high heat for 3 to 4 minutes; drain. Put it aside.
- STEP 3:
Heat the butter in the same saucepan over medium heat. Add the onion; cook, stirring occasionally, for 1 to 2 minutes or until the onion is tender. Add the flour, salt and pepper. Gradually add the evaporated milk and water. Cook, stirring constantly, until the mixture boils. Remove from the fire. Place the potatoes in the prepared baking pan; pour the milk mixture over the potatoes. Sprinkle with cheese.
- STEP 4:
Bake for 25 to 30 minutes, or until potatoes are tender and cheese is slightly browned.
- NOTE:
To give a twist to the traditional, season your potato gratin with these tips. Add a combination of chopped ham, red pepper and/or chopped green chilies to the potatoes before baking. Or, add 1 cup (4 ounces) of grated cheddar to the milk mixture after removing it from the heat and cover with additional grated cheddar instead of Parmesan cheese.
